After an inspirational trip to our local organic food market, I had to put to good use the delicious tomatoes I had just purchased so set about making a fresh chunky tomato salsa. Being the Mexiphile that I am, this simple to prepare salsa ticks all my tastebud boxes as well as ease of preparation for a maximum flavoured result.

For best results use fresh seasonal tomatoes that are ripe but not soft. The firm fleshed tomatoes make for a more texturally enjoyable experience.

Chunky Tomato Salsa

2 tomatoes ~ flesh removed and skin diced
2 cloves of garlic
1 knob of ginger
1-2 chillies to taste
1 tablespoon coconut sugar (optional)
1 small red onion ~ diced
1 small red pepper ~diced
small bunch coriander/ cilantro ~ finely chopped
small bunch mint ~ finely chopped
juice of 1 lime
2 tablespoons avocado oil
salt and pepper

Crush the garlic, ginger, chilli with coconut sugar in a mortar and pestle or a small food processor.

Add the flesh of the tomatoes and blend well.

Stir in the remaining ingredients, season well with salt and pepper and serve immediately.
